Fit Gals' Favorite Recipes: Soups!

Garden Vegetable Soup
1 spray cooking spray
1/2 cup sliced carrots
1/4 cup diced onions
2 minced garlic cloves
3 cups fat-free beef, chicken or vegetable broth
1 cup diced green cabbage
1 cup chopped spinach
1 tbsp tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp salt
1 cup dried zucchini
Spray large saucepan with cooking spray; heat. Saute carrot, onion, and garlic over low heat until soft, about 5 minutes. Add broth, cabbage, spinach, tomato paste, basil, oregano, and salt; bring to a boil. Reduce heat; simmer, covered, about 15 minutes. Stir in zucchini; cook 3-4 minutes more. Serve hot. (Can be frozen)

Chicken Tortilla Soup
4 cups water
10 oz canned black beans (drain)
10 oz Corn, No Added Salt Or Sugar, Canned (don't drain)
1 cup(s) fat free salsa
10 oz canned chicken (don't drain)
1 cup(s) uncooked instant brown rice
1 Can Campbell's 98% Fat-Free Cream Of Chicken Soup
1 pkg Spanish rice seasoning
1 chicken bullion cube
1 Tbsp lime juice
Put all in a pot and bring to boil. Then simmer for 45 min or until rice is tender (stir occasionally).
Serves 6
