Fit Gals' Favorite Recipes: Salads!

Avocado & Black Bean Salad

1 pint grape tomatoes - cut in half
1 yellow pepper - remove seeds & pith - medium dice
1/2 cup red onion - small dice
1- 15oz can black beans - rinsed & drained
1 jalapeno - seeded & finely diced
1/2 tsp lime zest
2 avocados - cubed (*add to salad just before serving*)

Vinaigrette
1/4 cup fresh lime juice 
1/4 cup olive oil
1 tsp salt
1/2 tsp pepper
1/4 tsp cayenne pepper
1/2 tsp chopped fresh garlic 

Whisk together & pour over veggies. 
Serves 8; Weight Watchers Points Plus Value per Serving = 6





Apple & Chicken Salad




Spinach
1/2 Apple sliced
Broccoli
5 Apple Chips (optional)
8 Almonds
1 oz Fat Free Feta Cheese Crumbles
Red Onion
Tomatoes
3 oz Chicken Breast Strips (I use Tyson Frozen Strips)
1 tbsp Cardini's Pear Vinaigrette 


Mix all together for a delicious salad!!!

Serving Size = 1 ; Weight Watchers Points Plus value per serving = 7





Thai Peanut Chicken Salad
3 oz. grilled chicken (I use Tyson Grilled Chicken strips)
2 Tbsp Thai peanut sauce (See example pictured)
spinach
10 whole almonds
mushrooms
tomato
red onion
carrots

Microwave chicken strips with peanut sauce (add 1 tbsp of water to make it more like dressing). Mix spinach, almonds, mushrooms, tomato, onion & carrots in salad bowl. Place cooked chicken on top of the salad.

Serves 1
Weight Watchers Points Plus Value = 7
